Shifting and Eating Light

It is week 3 of “Shifting” with Tory Johnson! I have lost 11 pounds and have 14 more pounds to go. In ‘The Shift’ Tory speaks on “paralyzing fears” and “making time for what’s most important to you”. These concepts really spoke to me because I too have had paralyzing fears of acceptance and conformity that maybe have given me precipitous relations with food and body image. Additionally, I spend most of my time caring for the needs of others, so it would only be befitting that my appearance reflect that; not any more!

Tory’s shift motivated me to do the hard work so that the effects can be maintained. The really cool recipes in the back have been extremely helpful in keeping me honest.

Occasionally I switch things up, not for lack of being authentic, or even following the recipes, but because I never write anything down so when I get to the store the recipes are all jumbled in my head!

Here is one of my jumbled variations:

Creole Salmon/Eggplant Frittata Muffins

2 eggs

freshly ground black pepper

Creole season salt

pinch turmeric

1 ounce Alaskan smoked salmon sliced 6 thumb-sized portions

Grape-seed oil

sea-salt

1 tsp unbleached flour

1 Egg-plant mostly peeled, sliced into thumb-sized pieces

fresh kale

Pre-heat oven to 375. Oil the muffin tin with grape-seed oil and set aside

mix 2 eggs, seasoning ( in my case, VERY generously ), flour

Pour mixture evenly into muffin tin

place a thumb-sized salmon slice in each opening

place a garnish of kale on each salmon slice

place a sprinkle of egg-plant in each opening

Place in oven and bake for 15 minutes or until muffin can pop right out.
